Pinot Gris 2023

In 2023 we experimented with pressing within minutes of harvest in order to preserve freshness and minimize skin contact. This reduced the need for fining to remove bitterness from the wine. The Acrobat Pinot Gris was fermented in 100% stainless steel at cool temperatures to maintain a pure expression of the fruit.
